Pepper Lime Chicken

1 lb chicken (I used tenders, stays moister)
1/2 tsp. finely shredded lime peel
1/4 c. lime juice
1 tbsp. olive oil
2 cloves garlic, minced
1 tsp. black pepper
1 tsp. dried thyme or basil, crushed
1/4 tsp. salt

Broil or grill chicken. Mix lime peel, lime juice, oil, garlic, black pepper, thyme or basil and salt. Baste chicken with lime mixture. Cook until no longer pink.

Very simple. Easy to prepare mixture ahead of time and freeze. Goes well with any side. The lime flavor really comes through, even without marinating. If you were using bigger chicken pieces, you might want to consider marinating it prior to cooking.
